Memo by Mataburro is a mineral white wine, very fresh, crunchy, full of small white berried fruits and citrus peel. Produced with macabeu grapes that come from 70-year-old vines. Vinification with short maceration on the skins, and aging in steel. Chapeau!

Service
We taste it at a temperature of 10/12° in tulip glasses. Wine to drink immediately but does not disdain to be aged.
Pairings
White wine ideal to accompany all the dishes of the table with fish, to try with sausage and broccoli bucatini.
Winery: Mataburro
Mataburro is a young and dynamic company located near Rivesaltes and Espira-de-l'Agly in Roussillon, and was born from an idea of Laurent Roger and Melissa Ingrand. The name means "donkey killer", because on the day of the inauguration of the first railway line, which passes behind the vineyards, in 1910, two unfortunate donkeys were killed by the trains. Laurent worked for several years at the Parisian bar à vin "Le Verre Volé", before returning to Roussillon to work directly with Alain Castex, then of Le Casot des Mailloles. In 2017 he took over the 3 hectares of vineyards that belonged to his father, old Grenache and Merlot vines planted by his grandfather in 1949. The vineyards are worked in a biodynamic regime and the only treatments used are sulphur, copper and some essential oils. The vinification uses native yeasts, with short carbonic macerations, without fining or filtration. Laurent and Melissa's goal is always to produce fresh, drinkable wines with a low alcohol content.
