Winery: Sa Defenza
Sa Defenza is a family-run winery located in Donori, about 30 kilometers from Cagliari. Donori is a small town of 2000 inhabitants that guards ancient autochthonous vineyards such as Cannonau, Bovale Sardo, Nasco and Nuragus. Sa defenza takes its name from the territory in which it is inserted and extends over 40 hectares of which 14 dedicated to vineyards, and the rest to citrus groves, olive groves and Mediterranean scrub. Today it is managed by the brothers Pietro, Paolo and Anna Marchi, now in the third generation of winemakers. Born with the great-grandparents from Gavoi, the first change occurs with her father Salvatore who decides to dedicate a few hectares of land to the cultivation of the vine. In 1999 the three brothers plant new vineyards, and start producing wine for their friends. The Marchi brothers take care of their vineyards with the principles of synergistic agriculture, they do not plow the soil to avoid weakening it, but they let the spontaneous herbs grow in order to improve the soil and obtain high quality grapes, they only use sulfur to prevent mold or other types of phytopathologies. The harvest is done by hand, and in the cellar, fermentations are spontaneous in steel containers, all wines are aged in steel and do not filter before being bottled. Various wines produced; the Deminera obtained from Cannonau and Bovale Sardo grapes, the Maistru produced by vue di Nuragus that come from 50-year old vines, and the Sacava, white wine macerated with Vermentino grapes.
