Sa Defenza is a family-run winery located in Donori, about 30 kilometers from Cagliari. Donori is a small town of 2000 inhabitants, guardian of ancient native vineyards such as Cannonau, Bovale Sardo, Nasco and Nuragus. Sa defenza takes its name from the territory in which it is inserted and extends for 40 hectares of which 14 are dedicated to vineyards, and the rest to citrus groves, olive groves and Mediterranean scrub. Today it is managed by the brothers Pietro, Paolo and Anna Marchi, who have come to the third generation of viticulturists. Born with the great-grandparents coming from Gavoi, the first change is with the father Salvatore who decides to dedicate a few hectares of land to the cultivation of the vine. In 1999 the three brothers plant new vines, and start producing wine for their friends. The Marchi brothers take care of their vineyards with the principles of synergic agriculture, they do not plow the soil to avoid weakening it, but they let the wild herbs grow so as to improve the soil and obtain high quality grapes, they only use sulfur to prevent molds or other types of phytopathologies. The harvest is done by hand, and in the cellar, the fermentations are spontaneous in steel containers, all the wines refine in steel and do not make any filtration before being bottled. Several wines produced; the Deminera obtained from Cannonau and Bovale Sardo grapes, the Maistru produced from vue di Nuragus that come from old vines of 50 years, and Il Sacava, white wine macerated with Vermentino grapes.
