The "Lustro" of Abbazia San Giorgio is a fragrant and mineral white wine that comes from pure Catarratto grapes. It shows a golden yellow glass tending to orange. The nose releases citrus and floral notes including lemon peel, bitter orange and orange blossom, but also hints of pineapple and passion fruit in the distance with a slight herbaceous note. On the palate it offers great sapidity and mineral sensations. Production of about 1,500 bottles of this small masterpiece.

"Lustro" - Abbazia San Giorgio
The Lustro of Abbazia San Giorgio is a fragrant and mineral white wine that comes from pure Catarratto grapes. Abbazia San Giorgio is located in Pantelleria and was founded in 2016 by Battista Belvisi, Three and a half hectares located in Khamma, in the south-eastern part of the island. Chopped into tiny bodies, about 300 mt. above sea level with an average age of 60, they are bred in zibibbo for two-thirds of the surface, while the remainder is cultivated in Pignatello, known here as “Nostrale”, Carignano and Nerello Mascalese. The Grape Harvest begins in the second week of September when the grapes have reached the right ripeness. In the cellar the grapes, after destemming, crushing and pressing, are fermented spontaneously thanks to the indigenous yeasts with a maceration on the skins for 20 days. During vinification, no addition of sulphites or filtration is carried out. It continues its aging in steel tanks for about 6 months. The Lustro is shown in a golden yellow glass tending to orange. Service
We recommend tasting it at a temperature of 12/14 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairing
To combine with traditional Sicilian dishes, vegetables, fish starters, shellfish and crustaceans, but also more structured dishes such as fish or stewed white meats.

The company Abbazia San Giorgio is located on the island of Pantelleria. Here viticulture is so difficult to be called "heroic". The company was founded in 2015 by Battista Belvisi, an agronomist expert in ecological viticulture and "natural" winemaking. Battista leads about 3.5 hectares of vineyards located in Khamma, in the south-eastern part of Pantelleria Island. The vines are run in biodynamic and bred in Zibibbo, Grillo and Pignatello, Carignano and Nerello Mascalese. All the vines are grown with the typical pantesco system, that is to say alberello, the only system that allows the growth of the vine on this island. Baptist in the vineyards does not use pesticides, cryptogams or any other type of chemical, but only small amounts of copper and sulfur. The grapes are harvested by hand with selection of grapes. In the cellar, fermentation takes place spontaneously by indigenous yeasts and both red and white are vinified in red with long maceration.
