Cloè from Abbazia San Giorgio is a rosé wine made from Nerello Mascalese grapes that come from vineyards located on volcanic soils. In the cellar the fermentations take place spontaneously, with brief maceration on the skins in the case of this rosé which then ages for 12 months between steel and chestnut. We recommend tasting it at a temperature of 10/12° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

Winery: Abbey San Giorgio
The company Abbazia San Giorgio is located on the island of Pantelleria. Here viticulture is so difficult to be called "heroic". The company was founded in 2015 by Battista Belvisi, an agronomist expert in ecological viticulture and "natural" winemaking. Battista leads about 3.5 hectares of vineyards located in Khamma, in the south-eastern part of Pantelleria Island. The vines are run in biodynamic and bred in Zibibbo, Grillo and Pignatello, Carignano and Nerello Mascalese. All the vines are grown with the typical pantesco system, that is to say alberello, the only system that allows the growth of the vine on this island. Baptist in the vineyards does not use pesticides, cryptogams or any other type of chemical, but only small amounts of copper and sulfur. The grapes are harvested by hand with selection of grapes. In the cellar, fermentation takes place spontaneously by indigenous yeasts and both red and white are vinified in red with long maceration.
