"Ailanto" by Mirko Mariotti is a sweet wine that offers aromas ranging from raisins to caramelized fig, with tertiary notes of carob and icing sugar. On the palate it shows good balance despite the prolonged refinement, leaving a pleasant note of sweet almond. Obtained from white grapes that are harvested manually during the first ten days of September. Subsequently, the grapes are dried directly in boxes in the air for approximately 60 days. After destemming, pressing with a pneumatic press follows. The must ferments slowly at cellar temperature until spontaneous interruption. The wine is kept in concrete tanks and periodically decanted. A long refinement in tanks follows for 5 years before bottling.
Service
It is recommended to taste it at a temperature of 10/12° in a tulip glass. A wine to be drunk immediately but left in the cellar for a few years it can give great emotions.
Pairing
Extraordinary on its own, it is perfect as an accompaniment to blue or very mature cheeses. Also excellent on dry pastries and signature chocolate.

Mirko Mariotti's company was one of the first to valorize "sands wines", such as Fortana and Golden Grapes, which grow in the sands of the coasts of Ferrara and have the characteristic of being still on foot.
