Champagne Origines Brut Nature - Salima & Alain Cordeuil
The Champagne Origines Brut Nature by Salima & Alain Cordeuil is truly a fascinating product of the Cote des Bar. The choice to use a blend of Chardonnay and Pinot Noir grapes in respective proportions of 65% and 35% leads to an interesting balance between freshness and complexity . It rests on the yeasts for 7 years, and the choice not to add any dosage after disgorgement makes this Champagne particularly interesting for those who love dry wines and want to enhance the purity of the grapes. On the nose the aromatic notes of pear, lime, hazelnut and wild flowers speak of freshness and minerality, while on the palate it presents a sharp freshness and flavor that make every sip pleasant. The good structure allows it to be appreciated both as an aperitif and accompanied by refined dishes. In summary, Origines Brut Nature is an excellent choice for Champagne lovers looking for an authentic and distinctive experience.

The origin of the grapes from historic parcels such as Val Prouse and Les Hauts de Morival, with 55-year-old vines, gives the wine a unique depth and character, typical of the most prestigious terroirs. The practice of letting the wine rest on the yeasts for 7 years is a sign of great commitment and quality, as this process contributes to the creation of more complex aromas and creaminess in the mouth. The choice not to add dosage after disgorgement makes this Champagne particularly interesting for those who love dry wines and want to enhance the purity of the grapes. The aromatic notes of pear, lime, hazelnut and wild flowers, together with an iodine intensity, speak of freshness and minerality, while on the palate it presents a sharp freshness and flavor that make every sip pleasant. The good structure allows it to be appreciated both as an aperitif and accompanied by refined dishes. In summary, Origines Brut Nature is an excellent choice for Champagne lovers looking for an authentic and distinctive experience.

Cellar: Salima & Alain Cordeuil
The story of Salima and Alain Cordeuil is a fascinating testimony of passion for viticulture and commitment to sustainable practices. Located in the renowned Côte des Bar, these vignerons have transformed their love for the land into an environmentally friendly production reality. Since 2012, Salima and Alain have adopted an organic farming method, which achieved certification in 2015. This approach is evident in the meticulous care of their 4 hectares of vineyards, where every intervention is aimed at keeping the soil alive and rich of nutrients. The use of vegetable compost from a nearby organic farm, together with the manual labor carried out with the help of their horse, is a sign of their dedication to the ecosystem. Since 2011, they have started producing Champagne, focusing on authenticity and quality. With a limited production of around 10,000 bottles per year, each wine brings with it the uniqueness of their grapes, without the addition of other wines or materials. Their practices in the cellar reflect the same philosophy: all labels are vintage and not dosed, with spontaneous fermentations carried out using indigenous yeasts and without chemical additives. Sulphites are used sparingly, only when strictly necessary. The result is a range of Champagnes that clearly expresses the terroir of the Côte des Bar and the passionate vision of its producers. Salima and Alain's bottles are the fruit of genuine and dedicated work, and true wine lovers can already taste the growing reputation of these young and talented vignerons in the wine scene.
