The Cuveè Quality Sparkling Wine Classic Method Brut by Castello di Stefanago is a sparkling wine obtained from a blend of white grapes. The grapes are harvested when fully ripe, almost overripe, with manual harvesting, and left to macerate for a few hours during pressing. The first fermentation takes place in steel tanks: fermentation which stops with the first cold temperatures. The arrival of spring favors the awakening of the yeasts which transform the last sugar residues into alcohol, thus naturally starting a second fermentation in the bottle. The disgorgement is done manually, after 36 months of remaining on the yeasts, and the bottles are filled with the same wine without adding anything.
Service
The recommended serving temperature is 10/12°C. Wine to be drunk immediately in flute glasses, but it is very long-lived and evolves with the passage of time.
