Cellar: Tristan Hyest
Tristan was born in 2001 thanks to the inheritance of a few hectares of land in the locality of Trelou sur Marne, from which the first cuvee began to be produced from 2003. The uniqueness of this small e dynamic producer is found in the creation of various micro cuvée parcellaires, mostly vintage, with very low circulation, often coming from a single barrique. This choice therefore allows to characterize with great precision the peculiarities of the individual terroirs and vintages. In the cellar we proceed with fermentation on native, long yeasts refinements sur lie and in caves for a time ranging from 4 to 10 years, arriving at having vinous and deep champagnes with very low dosage levels. The vineyard is worked with great respect, excluding synthetic products in favor of an ethical and sustainable approach. Tristan represents a condensation of passion, research and evolution in the heart of the Vallee de la Marne.
