Jonny Gambato by Cascina Baricchi is a sparkling wine refermented in the bottle, "Socially useful" as the label says because it is a wine of carefree conviviality par excellence. The six different grape varieties are harvested and pressed together with the white winemaking technique and then fermented spontaneously, both in the tank and in the bottle. In March the wine is bottled with its 10-12 g / l of residual sugar to end the fermentation in the bottle reaching a total alcohol of 9.5 °. Sparkling, opalescent and summery, it is perfect with raw fish, fried fish and many friends.

Service

It serves the Classic Method Et Voilà Pinot Noir at a 8/10 ° temperature in a ballon flute. We suggest to taste it right away but, if left in the cellar a few years can give great emotions. It is advisable to keep it in a cool cellar, damp and dark horizontal.

Pairing

Et Voilà is served as an aperitif or in combination with fish starters. Thanks to his body goes well with all main courses of traditional Italian cuisine. Try it with the turbot in a salt crust and baked potatoes.
