Segreto - Cascina Ebreo

"Segreto" is an extraordinary powerful and elegant red wine made from red grapes. The grapes come from a small vineyard of only half a hectare which is located on land consisting of calcareous-clayey marl. After the manual harvest, its vinification takes place in cement tanks with maceration for about 20-25 days, during fermentation no selected yeasts or temperature controls are used. The aging takes place in oak barrels for 26-30 months. It is bottled without filtration and remains in the bottle at least two years before being put on the market. The glass has a ruby ​​red color with purple reflections. Deep nose where fruity, spicy and menthol notes are released. In the mouth it is warm, enveloping, sturdy with a very long finish. An unforgettable wine.

Service

It is advisable to taste it at a temperature of 18/20 ° in balloon goblets. Wine to drink immediately but left in the cellar a few years can give you great emotions.

Peter Weimer and Romy Gygax, of the franconic part of Germany and she on the side of the village near Zurich, in love with the Tuscan landscapes, decided to leave their computer and banker work to dedicate themselves to wine production. Two years later with dogs, cats and horses moved definitively to the langhe and immediately began to renovate the farmhouse and regret the vineyards  The Jewish farmhouse is entirely organic with some biodynamic practices. Only organic fertilizers are used in the vineyard, and all the wines of Peter and Romy are fermented with only indigenous yeasts and bottled without filtration.
