Sinchè di Cascina Ebreo is a white wine rich in perfumes and structured from white grapes. Refine for 18 months in barrique. Sinchè - Cascina Ebreo
Sinchè di Cascina Ebreo is a white wine rich in perfumes, structured and full-bodied obtained from white grapes from a 0.4 hectare microparcel. After the manual harvest, the grapes are pressed in a closed vespa press and the must is transferred to a stainless steel tank. After 48 hours of rest, the must is separated from the solid parts and transferred to barriques for fermentation. There it remains together with the fine lees for 28 months. Battonage is practiced every week. At the end of the 28 months, until it is separated from the fine lees and placed in a steel tank. It is bottled without filtration and rests two years in the bottle before being put on the market. As long as it has a golden yellow color with a complex and articulated nose with evident fruity notes. In the mouth it is round, warm, with good acidity and structure.
Service
It is advisable to taste Sinchè at a temperature of 10/12 ° in ballon goblets. Wine to drink immediately but left in the cellar a few years can give you great emotions.
Pairing

Peter Weimer and Romy Gygax, of the franconic part of Germany and she on the side of the village near Zurich, in love with the Tuscan landscapes, decided to leave their computer and banker work to dedicate themselves to wine production. The commissioners judged the Torbido an excellent wine but too veiled for obtaining the DCOG, hence the name of the wine. The Jewish farmhouse is entirely organic with some biodynamic practices. Only organic fertilizers are used in the vineyard, and all the wines of Peter and Romy are fermented with only indigenous yeasts and bottled without filtration.
