Service
We taste Red Monochrome at a 16/18 ° temperature in tulip chalice. Wine is to drink at once, but it can give you some fantastic emotions if you keep it for a few years.
Pairing
The Red Monochrome fits perfectly with the first dishes with ragout, grilled and damp meats, to try with tongue and cabbage ravioli.
Cellar: Mario Macioccia
Mario Macciocca is one of the most appreciated vineyards in the Lazio wine country. Former Italian national football player, almost graduate in physics and barman at the historic La Palma club in Rome, decides to leave everything and pursue his dream of a winemaker. Today it cultivates four hectares of biodynamic vineyards on the slopes of the Scalambra mountains, Pila Rocca and Carmine, along the Simbruini chain on limestone-marnian fields. Mario cultivates predominantly Cesanese, who here, in these mountains sheltered by cold and temperate winds, has found the ideal habitat for its development, and small quantities of Passerina and Malvasia Puntinata. In the cellar it prefers spontaneous fermentation, uses only native yeasts and refinements are only in steel tanks or wooden barrels. Seven labels produced from red and white monochrome refined in steel to the most complex Civitella Red accentuated in large barrel. Serious wines, enjoyable, all to look for.
