The Chat Fou is a fresh and juicy wine that comes from a blend of Grenache, Cinsault, Carignan red grapes with a small percentage of a white berry variety, Cinsault. It has a ruby red color. On the nose, aromas of currant jelly, raspberry, with a slightly spicy touch. On the palate it is complex, elegant and surprisingly long.

Chat Fou - Eric Texier
Blend of Grenache, Cinsault, Carignan and Chasselas. Fermentation and maceration take place in concrete tanks for 7-8 days. The subsequent affinction is carried out for 6 months in steel. The particularity of this red wine is to contain 10% of white grapes which adds elegance and refinement. Chat Fou is ruby red. Service
We recommend tasting the Chat Fou at a 16/18 ° temperature in tulip glass. Chat Fou is to drink at once but will express the best of himself in a few years. It is recommended to keep it in a horizontal position in a fresh, damp, dark cellar.

Eric Texier, a training engineer and passionate jerk, after having been spotted across France to watch the vineyard work, decides to stop in Vallée du Rhone, where he buys a small vineyard in Valence in Cotes du Rhone fifteen years ago. Eric has an idea of producing fine, elegant wines with a moderate alcohol content that combines good aging potential. The vineyards cultivated in Syrah, Roussane, Grenache, Cinsault, Carignan and Chasselas are processed in organic with some principles of permaculture. In the cellar, vinification is spontaneous in steel containers or whole clusters of wood, as in the local tradition, refinements in tonneau and bottled without filtration. Today Eric Texier is helped by his son Martin who helps his father with enthusiasm and energy. Eric's wines are expressive, and drinking is like taking a trip over time, savoring a tradition, a terroir, a taste for the taste buds.
