Brezèmè Rousanne - Eric Texier
The Brézème Rousanne is a white wine obtained from Rousanne grapes that come from old vines that grow on pebbly soils. The fermentation takes place spontaneously with the only indigenous yeasts in cement tanks. It refines in its same cradles its own fine lees for a few months. It is bottled without filtration. Rousanne Brézème is straw-yellow in color. The nose has a clear and complex profile with hints ranging from fruit to yellow flesh, flowers, herbs. At the sip it is full, enveloping, with good structure and freshness, with a good closure.
Service
We recommend tasting it at a temperature of 8/10 ° in a tulip glass. Wine to drink immediately but will express its best in a few years. It is advisable to keep it in a horizontal position in a cool, damp and dark cellar.
Pairing
It goes well with first courses based on vegetables, second courses of fish, to try with a Provencal sole.

Eric Texier, a training engineer and passionate jerk, after having been spotted across France to watch the vineyard work, decides to stop in Vallée du Rhone, where he buys a small vineyard in Valence in Cotes du Rhone fifteen years ago. Eric has an idea of producing fine, elegant wines with a moderate alcohol content that combines good aging potential. The vineyards cultivated in Syrah, Roussane, Grenache, Cinsault, Carignan and Chasselas are processed in organic with some principles of permaculture. In the cellar, vinification is spontaneous in steel containers or whole clusters of wood, as in the local tradition, refinements in tonneau and bottled without filtration. Today Eric Texier is helped by his son Martin who helps his father with enthusiasm and energy. Eric's wines are expressive, and drinking is like taking a trip over time, savoring a tradition, a terroir, a taste for the taste buds.
