We taste it at a temperature of 16/18° in ballon glass. This wine could be drinking right away but left a few years in the cellar can give great emotions.

It combines perfectly with first courses with game ragout, grilled and roasted meat, to try with a beefsteak with tomatoes and peas.
Cellar: Frank Cornelissen
The cellar of Frank Cornelissen is located in Solicchiata, on the north side of Mount Etna. Frank, of Belgian origin and exuberant and dynamic character who has always fallen in love with wine years ago to leave his land to come to Sicily and produce wine. Frank's philosophy of vine cultivation is that man is not able to fully understand Nature in its entirety, its delicate internal equilibrium, and therefore, any intervention is intended to overwhelm it, to dominate it. His approach, however, is completely different, he does not have his land, does not use any chemical, biological or biodynamic vineyards, grapes are harvested for perfect ripeness and fermentations take place in terracotta pots of various lava stone. Its vineyards are micro-farmed farmed forests with the sapling system, located in different districts at an altitude ranging between 600 and 900 m.s.l.m. Frank cultivates not only the typical vineyards of Etna such as Nerello Mascalese and Cappuccio but also old vines that have almost disappeared like Grecanico, Francis and La Minnella Bianca e Nera. His wines are authentic expressions of the eternal terror and as he says, "Wines before being good must be true."
