Cellar: Philippe Jambon
Philippe Jambon, former sommelier, started producing wine in 1997, and shortly after became a cult figure of natural wine thanks to his strong determination to work "zero zero" both in the vineyards and in the cellar where, from the beginning, completely excluded the use of sulphites. Philippe and Catherine's vineyards extend over 4 hectares spread around the village of Chasselas, Saône-et-Loire department in the Bourgogne-Franche-Comté region. On the border between Northern Beaujolais, a gamay territory on granite and sandy soils, and Southern Mâconnais, a chardonnay territory on clay and limestone. Philippe produces reds and whites in a strictly artisanal manner based on a single requirement: healthy and ripe grapes. Phenolic and physiological maturity is essential for making whole bunches of wine, working with long macerations and very long refinements (2011 Gamay and 2006 Chardonnay still rest in the cellar). The style of the wines, traditional and uncompromising, is not consistent with the conventional standards of the AOC and consequently all vintages are downgraded to simple Vin de France. Wines that stand the test of time, full-bodied, marked by an authentic, sometimes wild, specificity that can only excite those who love nature in all its forms.
