Service
We taste it at a temperature around 16/18 ° C. Wine to be drunk immediately but left a few years in the cellar can give great satisfaction.
Pairings
It goes perfectly with meat-based main courses. Excellent with a fillet with mushrooms.
Winery: Els Jelipins
Els Jelipins is a small and lively Spanish winery located in Font-rubí, a very small town located in Penedes. The company was created in 2001 by Glòria Garriga, and her desire to create a wine project that would allow him to live on the hills of Font-Rubí, together with his family, enjoying a moderate life that could give him personal enrichment in tandem with the forces of Mother Nature and an appreciation of the simpler things in life. Gloria works exclusively with Sumoll, a native variety of Penedès, once widely cultivated throughout Catalonia, which since the 1980s has been replaced by other varieties, almost leading it to extinction. The grapes come from selected hillside vineyards, and Gloria follows the winemakers' vineyard practices and advises them throughout the year. Each vineyard is chosen for its particular location, its climate, the grape variety, the age of the vines, the type of soil, and is treated as an individual. In the cellar Gloria tries to limit interventions during the winemaking process as much as possible, acting with respect and delicacy. The fermentations are only spontaneous, and the refinements take place in used French barrels, terracotta amphorae and vats. The wine is bottled without clarification, filtration or stabilization. Gloria produces around 2300 bottles of red per year, and since 2014 around 200 bottles of white, and each bottle is symbolized by a hand-painted heart. If you taste one of their wines, for a moment you will become part of a dream, exactly as Glòria and Berta desired.
