Service
We taste it at a temperature of 16/18 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairings
To be opened with meat or cheese, if you sip it in combination with Sardinian pecorino you will find it simply irresistible.
Cellar: Marco Caneddu
Cantina Canneddu is a family-run business located in Mamoiada. It was born in 2015 from the will of Marco, to transform his passion and the years of study at the Oristano faculty of oenology into his profession, and produce a natural wine with character, which transmits to those who taste it, all the facets of the place in which it is born. Marco's passion for wine was passed on from his father Tonino, who inherited two hectares of vineyards from his in-laws and began producing wines for domestic use. The vineyards are made up of old rows of cannonau with an average age ranging between sixty and eighty years, located in the hills between 650 and 800 meters, on granite decaying soil. Marco and Tonino cultivate the vineyard according to the dictates of organic farming: to tractors they prefer plowing done with oxen, the only means capable of passing between the narrow rows, and they carry out a maximum of two treatments a year with sulfur and copper . The harvest is manual, and in the cellar the fermentation takes place spontaneously with the use of indigenous yeasts only, while the refinements take place in exhausted oak tonneau for about a year. Marco is helped in his work by his mother Anna and his sister Grazia who develop and take care of the commercial and administrative part. Three wines are produced: Zibbo, their most representative wine, obtained from Cannonau grapes, grapes that are also used for Rosato, and Delissia, the white wine made from granatza grapes.
