Supersonique by Thomas Rouanet is a deep and intense red wine produced in the Languedoc region. It is a blend of Carignan, Aramon, and Cinsault, produced from vineyards of at least 70 years, the fermentation takes place spontaneously with only indigenous yeasts. Part of the maceration is carried out with whole bunches while the refinement takes place in oak barrels and lasts about 10 months. A wine that fully reveals all the nuances of the terroir it comes from.

Service
It is recommended to taste it at a temperature of 16/18° in tulip goblets. Wine to drink immediately but left a few years in the cellar can give great emotions.
Pairing
Excellent with land cuisine, it is to be tried with baked lamb chops.
Cellar: Thomas Rouanet
Thomas Rouante's cellar is located in the village of Creissan not far from Saint Chinian, in the heart of the Languedoc. Thomas, who is the fourth generation of a family of winemakers, took over the management of the domaine in 2012 after having worked in other companies, including an experience with Yannick Pelletier. Today he cultivates about 4 hectares of vineyards which are mainly located on clayey-limestone soils. The varieties he works with are the indigenous and traditional ones in Languedoc: Grenache Noir, Carignan, Syrah, Alicante, Cinsault and the rare Terret. The company has been organically grown since the mid-1990s, when it was run by Thomas's grandfather, whose agricultural conduct still influences Thomas' work today. The work in the vineyard is done manually, without the use of chemicals and the winemaking style favors elegance and drinkability over the structure. The company has three cuvées: two reds, Bombadilom and Voltigeur, obtained from semi-carbonic vinifications, and a white, L'Illicite, an assembly of Terret Gris and Terret Blanc.
