Service
We taste it at a temperature of 16/18° in the tulip glass. A wine to be drunk immediately but will express its best in a few years.
Pairings
Versatile and fun, this red from Languedoc goes perfectly with first and second courses based on white and red meat, poultry in sauce, barbecue and grilled meat.
Cellar: Le Clot de l'Origine
Those of Marc Barriot are sea and mountain wines. Indeed, the territory of Roussillon is surrounded by the Corbières mountains to the north, the Pyrenees and Mount Canigou to the west, the Albères massif to the south and form an amphitheater overlooking the Mediterranean. The landscape, harsher than in neighboring Languedoc, is dominated by sun, wind and rock. The soils are a stratification of limestone, black marl, volcanic aquifers, schist and granite. The vegetation, called garrigue, recalls the Mediterranean maquis. The 10 hectares of Clot de l'Origine are developed in different municipalities from Salses le "Château" to Caudiès de Fenouillèdes passing through Maury, where the cellar is located, and Calce and vary from 120 meters to 350 meters in height. Marc Barriot produces white wines from red grapes and red wines of great freshness and lightness.
