Service
We recommend tasting it at a temperature of 16/18° in tulip glasses. Wine to drink immediately but will express its best in a few years. It is advisable to keep it in a horizontal position in a cool, damp and dark cellar.

Cellar: Domaine Ratte
Domaine Ratte is located in Arbois in the heart of the Jura. Since 1989 Michel-Henri and Françoise Ratte have run the estate with the help, in recent years, of their son Quentin. Right from the start they followed an approach, in the vineyard and in the cellar, as less interventionist as possible to have the maximum expression of the terroir: in the early nineties they fully embraced biodynamics, certifying themselves as Bio and Demeter, convinced that this practice gives additional energy to the vigor. of the vine. The domaine to date is composed of nine hectares of vineyards, divided into the various localities of the Arbois, which are vinified individually. The grapes grown are quelel typical of the Jura: Chardonay, Savagnin, Poulsard, Trosseau and Poinot noir. In the cellar, fermentations are spontaneous, and decanting is dictated by the lunar calendar. In all wines no sulfur is added and they are not filtered. The wines of Domaine Ratte preset minerality, fruit and flowers, giving a vibrant and at the same time disarming sip.
