Rosmarinus' Rossese di Dolceacqua Alpicella is a fine and delicate wine that is produced with the grapes of the same name. The grapes come from a small parcel cultivated in biodynamic which is located near Alpicella. After manual harvesting, in the cellar the fermentation is spontaneous with only indigenous yeasts and without temperature control, with maceration on the skins for about 15 days. After racking, it ages in steel for 12 months. Elegant. A wine that tastes of aromatic herbs, orange peel and brackish memories.

Service
It is recommended to taste it at a temperature of 18/20 °. It is a wine to be drunk but left in the cellar a few years can give great emotions.
Pairing
It accompanies meat-based menus, savory first courses, aged cheeses, to try with pork tournedos with bacon and potatoes.

Marco and Francesca are a small family-run farm, Rosmarinus. They live and work in the wild hinterland of the extreme west of Liguria, in Perinaldo. They produce only one wine, Rossese di Dolceacqua D.O.C and extra virgin olive oil from Taggiasca olives, all in small quantities. Over time Marco tore olive trees from the brambles and brought them back into production, distilled essential oils, became passionate about beekeeping and in 2001 planted 1.2 hectares of vineyard.
