The company of Ermes Pavese is located in the hamlet of La Ruine, and its roots lie in the history of each family of Valle d'Aosta, linked to the agricultural life that marked the days and years, to produce the wine that served as a livelihood. Even today, the company's entire engine is the family, and all production phases, from harvesting to vinification, are followed directly by Ermes Pavese. The vineyards are located around the house that also serves as a cellar. Three hectares of very fragmented vineyards, partly owned and partly rented planted in Priè Blanc, which are reared with the traditional low pergola, to avoid damage due to low temperatures, which are located at an altitude of about 900 meters until at 1200 meters above sea level In the cellar Ermes uses spontaneous vinification and performs a light filtration before bottling the wine. Five wines are produced: Blanc de Morgex et de La Salle, Blanc de Morgex et de La Salle «Nathan», sparkling wine Blanc de Morgex et de La Salle Metodo Classico and «Ninive» l'icewine made from grapes of Priè Blanc overripe.
