"Sandrigo" - Denis Montanar
Sandrigo is a fresh and juicy white wine based on local white grapes that come from 30-year-old organically grown vines that grow on loamy, sandy and clayey soils. The harvest is manual, followed by spontaneous fermentation with only indigenous yeasts and aging on the fine lees for 8 months in steel tanks. Tocai Borc Sandrigo is a straw yellow color. The nose reveals fruity aromas, reminiscent of tropical fruit, followed by citrusy touches. The palate is medium-bodied, fresh, mineral and with a fruity finish.
Service
We taste the Sandrigo at a temperature of 8/10°. It is recommended to decant it before serving. Wine to be drunk immediately but left in the cellar for a few years can give great emotions.
Pairing
"Sandringo" envelops and enriches the fish dishes to be tried with spaghetti with shrimp and salicornia.
Cellar: Dennis Montanar
The cellar of Denis Montanar is located in Borc Dodon, in the province of Udine. Denis is predestined, in fact, has come from a family of farmers for four generations. It all begins at the beginning of the twentieth century when, his great-grandfather, he began cultivating a few hectares of land under hay. In 1989 Denis began to lead the family business by renting grandfather vineyards. He then began to buy hectares of vineyards and an old rural village with the idea of creating a territorial brand bearing the name of the hamlet: Borc Dodon. Not only wine is produced but also ancient varieties of wheat, corn, buckwheat and then medical herb for fertilizing and sunflowers for the oil. The vineyards grow on sandy, lime and clay grounds, and since 1996 they have been cultivated in organic with minimal treatments, using only low-dose copper and sulfur, hand-picked grapes and fermented wines with natural yeast and in the cellar Are clarified. Brewed vineyards are the classic Friulian autochthonous ones, such as Refosco rosso, Cabernet Franc, Verduzzo Friulano and Tocai Friulano, but internationals such as Merlot, Cabernet Sauvignon, Pinot Bianco, Chardonnay and Sauvignon are also grown. Denis Montanar is part of two circuits that impose a definite and severe decalogue of production, namely the "Renaissance du Terroir" and "Triple A".
