“Aurora” by I Vigneri is a splendid elegant and mineral wine made from local white grapes. Its name, "Aurora", that is Alba, also indicates a small and graceful butterfly native to Etna, represented on the label and at risk of extinction. After harvesting by hand, spontaneous fermentation takes place in steel vats using only indigenous yeasts. Subsequently it refines in the same containers for several months.

Service
We recommend serving it at a temperature of 10/12° in tulip glasses. Daily wine, but if left in the cellar a few years can give great emotions.
Pairings
Excellent with first courses, cured fish and aged cheeses, to try with chops with sauce.
Winery: I Vigneri
I Vigneri is a Sicilian consortium located on Mount Etna. Founded in 1435 in Catania under the name "La Maestranza dei Vigneri", its main objective was to teach future generations how to raise vines and produce wine. Six centuries later, the consortium is led by the oenologist Salvo Foti, who sells around him that the ancient wine-making traditions were disappearing, he decided, that to recover the old vines and produce a wine that reflected the Etna territory, it was only possible to leave from the men who knew well this area and the ancient viticultural knowledge. The consortium is made up of six producers who lovingly care for the old centenary vines raised in alberello, scattered from Etna to the Aeolian Islands and to Pantelleria, Pachino and Caltagirone, and with the strength of their hands they repair the dry-stone walls that support the impervious lava stone terraces. Each producer is independent, but communicates his adherence to the common philosophy by bottling his wines in the bottle of I Vigneri, which shows in relief the symbol of the consortium, that tree that has its roots in 1435. Finally, every October, during the harvest on the volcano, repeating the same gestures of the first Vigneri of the fifteenth century.
