The Sauvignon Blanc by Vinos Ambiz is a white wine obtained from the vine of the same name. It comes from 40-year-old vines, guaranteeing its richness and complexity of flavor. Spontaneous fermentation with indigenous yeasts in steel tanks without any temperature control. The must remains in contact with the skins for seven days. Aging takes place in terracotta amphorae above ground for six months. Once bottled, the wine remains in the cellar to rest for thirty days.

Service
We taste it at a temperature around 10/12° C. Wine to be drunk immediately but left a few years in the cellar can give great satisfaction.
Pairings
It goes perfectly with fish based main courses. Excellent with a fish with mushrooms.
Winery: Vinos Ambiz
Vinos Ambiz is located in the village of El Tiemblo, in the Sierra de Gredos region, fifty minutes from Madrid, a region characterized by the classic continental climate with soils, on average between 650 and 800 meters above sea level, rather poor in organic matter, steep and with crumbling granite, covered with sand and clay. Generally the wines of Gredos have a good minerality thanks also to the thermal excursions that favor a beautiful intense Garnacha. Behind Vinos Ambiz we find Fabio Bartolomei, of Italian origin was born and raised in Glasgow, Scotland where his family originally from the province of Lucca emigrated. He has lived in Spain for about 20 years and is a self-taught wine, as well as a one man band. It owns a few hectares of property, but otherwise boasts consolidated relationships with old local winemakers for which it controls the vineyards and the harvest. His back labels are a manifesto of his idea of making wine, without the help of pesticides, chemical fertilizers or synthetic products and without then clarification or filtering.
