The grapes come from the Vigna della Rosa, a plant dating back to 1985, in the high Apennine ridge at 400 meters above sea level, on soils rich in marl and sandstone. Spontaneous alcoholic fermentation with indigenous yeasts only in second passage Alier French oak barrels. 12 months aging in second passage Alier French oak barrels, then stabilization in bottles.

Cellar: Vigne dei Boschi
The company of Paolo and Katia Babini, Vigne dei bosco, was born in 1989, with the purchase of a 35-hectare farm in Valpiana di Brisighella (RA), at over 400 meters above sea level, in the Apennines. The vineyards occupy six and a half hectares, in a very suitable area, but abandoned by viticulture in the second post-war period. All the plants were made between 89 and 2000, and in addition to the traditional variety, the Babinis have chosen to put some vines they loved, and which they imagined could have responded in an original way given the characteristics of a territory where the ripening of the grapes they were slower and the day-night temperature changes favor the scents. So there are Riesling and Sauvignon Blanc, from which labels different from all known ones are born. “Borgo Casale” is not the usual Sauvignon, and “16 souls” is not a conventional Riesling. Vigne dei bosco presents international vines as "originality". Which are accompanied by labels of the "tradition", therefore Sangiovese but above all Albana and Malbo. The Brisighellese Malbo, now vinified alone, is a recovered grape variety. The company Albana, the son of clones from a vineyard over 50 years old, is the vine that offers more stimuli to do new things: it is not very alcoholic compared to the versions produced at a lower altitude, it always shows excellent acidity, it is full of elegance and minerality. Since 1994 the cultivation of the vineyards is with the organic farming method and since 2002 the company management has begun according to the dictates of biodynamic agriculture. In addition to the use of specific preparations, Vigne dei bosco intervenes with composting, green manure and treatments on the vines with the use of herbs and other natural substances. These principles are also used in the winemaking process which excludes any type of manipulation.
