One of the new born in the Canlibero family, Shiro is an excellent wine from white grapes. No filtration or clarification before bottling. Shiro comes to the straw yellow glass. Service
We taste Shiro at a temperature of 8/10 ° in tulipano glasses. A wine to be drunk immediately but left in the cellar for a few years can give great emotions.
Pairing
It goes well with fish or fresh cheeses, for a light lunch we recommend it combined with a tuna carpaccio with sesame.
Cellar: Canlibero
Canlibero is a wonderful reality that is located in Torrecuso, in the Sannio area of Benevento, a territory very suited for the production of wine. The architects of this project are Ennio Romano and Mena Iannella, two young producers who cease to confer the grapes produced to the local cooperative and begin to make wine on their own. Ennio and mena believe that wine is spiritual nourishment, but in order that it gives emotions and feelings of well-being it must be done with awareness. They cultivate two hectares of vineyards, divided into different parcels in the territory, but all accumulated by a cultivation that follows the biodynamic philosophy . The vineyards, which are located at altitudes between 420 and 470 meters on clayey and rocky soils, are from Aglianico, Fiano, Falanghina and Trebbiano, and some as the Aglianico vineyard called Turrumpiso reaches 50 years of age. The winery Canlibero wines are obtained through spontaneous vinification with indigenous yeasts, no use of sulfur dioxide, and no filtration or clarification before bottling. Canlibero wines are able to excite and communicate the layman and the personality of those who produced it.
