Vitovska - Benjamin Zidarich

Vitovska is a native Carso grape, also known as vitouska or vitovska gargania. Benjamin Zidarich picks the grapes manually and is vinified spontaneously on the skins in karstic rock vats, without lids or temperature control. It is aged for two years in barrels of different sizes in Slavonian and French oak. It is neither filtered nor stabilized before bottling. Vitoska has a golden yellow color. The nose gives notes of cooked fruit, mineral and smoky hints, medicinal herbs and wild flowers. At the sip it is pleasant, fresh, mineral, with an excellent sapid final.

Serving

it is advisable to taste it at a temperature of 14/16 ° in tulip glasses. Wine to be drunk immediately but left in the cellar a few years can give great emotions.

Pairing

Winery: Benjamin Zidarich

Benjamin Zidarich's winery is located in Prepotto, in the province of Trieste, in that mysterious and impervious area, which is thrown into the Adriatic Sea, called Karst. Here the soil is clayey and stony, and tearing meters to the ground to plant the vine can sometimes be a daunting task. For Benjamin, the karst is his land, represents his way of being and thinking, and believes in the tradition and vocation of this land to produce wines in a natural way, according to the concept of real wines. He founded his company in 1998, and in 2009, after eight years of work, he inaugurated his new cellar carved into the rock, which is spread over five floors with a depth of 20 m. The earth that was removed during excavations was used in the vineyards. In the cellar there is the whole heart of the work of Benjamin, in fact we find the vinification room, that of maturation and that of tasting placed at the highest level. Benjamin Zidarich has a sacred respect for the land, does not use chemicals, tries to intervene as little as possible in the cellar and vineyard, the sulfur dioxide doses are very low and the maceration and fermentation take place in karstic rock vats, without covers or temperature control. After maceration, at least two years of aging in cask. From its eight hectares of vineyard, Benjamin Zidarich produces about 25,000 bottles including Vitoska, an autochthonous Carso grape variety, Malvasia, Prulke, Vitovska, Malvasia and Sauvignon blends, Terrano, Ruje, Merlot and Terrano blends.
