Le Cince is a Montepulciano-based rosé wine which ages for 8-10 months in large wooden barrels. Seductive nose that evolves into a beautiful floral expression, in particular pink and violet, followed by hints of raspberry and cassis, and in closing by light mineral notes. Cerasuolo d'Abruzzo "L e Cince" - De Fermo
Cerasuolo d'Abruzzo Le Cince is a fresh and juicy rosé wine made from 100% Montepulciano d'Abruzzo grapes. The grapes come from vineyards located in Loreto Aprutino, a special place that in recent years has risen to prominence for the production of excellent wines. the production is really small, around 1600 bottles. The harvest is manual with careful selection of the grapes, and in the cellar the fermentation is spontaneous in cement tanks with maceration on the skins for a few hours. Aged for several months in wooden barrels. No clarification, no filtration before opacification. The Cerasuolo d'Abruzzo Le Cince has a deep pink color with a seductive nose that evolves into a beautiful floral expression, in particular pink and violet, followed by hints of raspberry and cassis, and in closing by light mineral notes. In the mouth it is fresh, fleshy, acidic, very vinous and closes with a nice sapidity. A great, appealing rosé of great personality but with an impressive drink. the production is really small, around 1600 bottles.
Service
We recommend tasting Le Cince at a temperature of 10/12 ° in tulip goblets. Wine to drink at once but that will express its best features in a few years.
Pairing
Great as it can be combined with vegetable appetizers, first fish dishes, to try with a salad of quinoa with vegetables.
Cellar: De Fermo
De ferme is located in Loreto Aprutino, between the Adriatic and the southernmost glacier of Europe, which was born only in 2009 but in a few years it has been able to carve out an important place in Abruzzo's viticulture. Located in a historic villa dating back to the 7th century, surrounded by vineyards, olive groves and woods. The vineyards comprise 17 hectares of Pecorino, about one hectare, Chardonnay, 4 hectares, and Montepulciano d'Abruzzo for the rest. All vineyards are breeded with biodynamic dictates and in the cellar only indigenous yeasts, no oenological aid, no temperature control, fermentation and refining only in large or cemented woods, no filtration, stabilization or clarification are used before bottling.3 Wines products; The Cince, Montepulciano rose-colored wine, The Prologue, their red wine aged in large barrels and white Pecorino. All their wines reflect the philosophy of the De ferme; Spirits, education, study and observation that represent the search for the depth, strength and substance of their actions.
