Ruchè - Pierfrancesco Gatto
The Ruchè was a nearly extinct vine that was discovered by Fr. Giacomo Cauda, considered Ruchè's father. Its origins are not clear, but it is thought that it was brought here by the Cistercian monks returning from Burgundy. The version proposed by Cat brews in steel tanks with maceration on the skins for 4 days. One third of the grapes follow a 6-month maturing in cement tanks. It is a ruby-colored wine. The nose feels a fine and persistent bouquet with notes of rose and red fruit. In the mouth is round and full, of great elegance, slightly tannic with a long persistence and memories of ripe cherries.

Pairings
Great with antipathies, first course dishes, seasoned cheeses, to try with rabbit in wet.
Cellar: Pierfrancesco Gatto
The Gatto Pierfrancesco company was founded in the early 900, and is located in Castagnole Monferrato, in the province of Asti. A hilly area with cold winters and hot summers, mitigated by continuous sunshine, which allows a perfect ripening of the grapes produced here: Barbera, Grignolino and Ruchè. The latter was imported into these areas in the Middle Ages by Cistercian monks who came from Burgundy. Ruchè was the wine of festivity and solemn occasions, the wine that in the infernuts occupied the niches most hidden, able to preserve liturgically this wine, precious as a relic. Almost lost vanilla was rediscovered by Fr. Giacomo Cauda, considered Ruchè's father. Pierfancesco thanks to his meeting with Don Giacomo Cauda falls in love with the Ruchè and now cultivates 3 hectares of this vine, to which are added another 17 among the municipalities of Fr Montemagno, Viarigi, Refrancore and Castagnole Monferrato raised in Barbera and Grignolino. The vineyards are located on sandy, tuff-like terrain, with a south-west exposure that allows a good maturation and salubrity of the grapes. Pierfrancesco Cat tries to intervene as little in the vine as in the cellar so that its wine is the most natural and loyal mirror of the terroir. 80000 bottles produced.
