Arbois Trousseau Singulier - Domaine Tissot
Obtained from Trousseau grapes, typical grape varieties of the Jura region, coming from a grapevine cultivated in a biodynamic regime on calcareous soils. After the grapes are destemmed, spontaneous maceration and fermentation takes place in oak barrels for 1 month with regular sowing and pressing. Follows the refining of oak demi-muids of 600 l on fine lees, without squeezing, for 1 year. No filtration before bottling. Domaine Tissot is located in the village of Montigny-les-Arsures, near the town of Arbois, nestled in one of the most important areas of the Appelation Jura area, one of the smallest French wine regions. Its foundation dates back to 1962, by André and Mireille Tissot, who immediately believed the potential of this denomination. Today, Domaine is run by his son Stéphane together with his wife Bénédicte, who in 1999 converted vineyards into organic and in 2004 the definitive transition to the biodynamic regime with Demeter certification. The vineyard extends for 43 hectares with Chardonnay, Savagnin, Pinot Noir, Trousseau breeding for the production of about 36 labels. Among the production is also the rare Vin Jeune, sherry-like wine, obtained from Savagnin grapes, aged for six years and three months in 228 liters bottles. All Tissot wines are pure expression of the territory where genuine and authentic wines are produced.
