Valpolicella DOC - Montenigo
Valpolicella DOC from Montenigo is a fine and mineral red wine with aromatic notes of red fruit and spices. Obtained from Corvina and Rondinella grapes which come from vineyards located on calcareous-clayey soils. The fresh grapes, as soon as they are harvested, are immediately pressed into oak vats where spontaneous fermentation begins in the traditional way, with the only control of the temperature never exceeding twenty-eight degrees. It refines in oak vats for ten months where the malolactic fermentation occurs spontaneously, it is then bottled without filtration. Wine throughout the meal, ideal with risottos and soups. Second courses based on meat that are not too elaborate. Excellent with cured meats and medium-aged cheeses.
Service
We recommend tasting it at a temperature around 16/18° C in tulip glasses. Wine to be drunk immediately but left in the cellar for a few years can give great satisfaction.
Pairings
Try homemade cured meats and cheeses, small sauerkraut, excellent with a boar stew.
Cellar: Montenigo
The Montenigo company is a family business located in Montorio, a few kilometers from the center of Verona, in the countryside of Valpolicella. It was born with the aim of producing high quality natural wines, and the philosophy that inspires the founders is linked to love and respect for a mild and lively land. It is spread over 29 hectares, of which 4 are cultivated with olive groves, 7 with vineyards and the remainder with a luxuriant and verdant wooded area. The vineyards are organically grown and among the rows we can find; Merlot, Croatina, Corvina and Sangiovese. In the cellar, thanks to commitment and dedication, the typical wines of Valpolicella DOC and DOCG are born, all natural wines and low in sulphites.
