Microbio - Microbio Wines
Microbio by Microbio Wines is an exceptional white wine born from pre-phylloxera Verdejo vines over 100 years old. Grown in siliceous sand soils, these ancient vineyards yield fruit of rare concentration. Ismael Gozalo’s philosophy centers on a respectful, artisanal approach: the wine is produced through the direct pressing of whole clusters without destemming, followed by spontaneous fermentation with indigenous yeasts. The must is then transferred into old Alsatian foudres for one year of aging in neutral casks, a choice that preserves the integrity of the grape variety without interference from new oak. The result is a white wine of extreme finesse, defined by a tense and vibrant sensory profile. Thanks to its sharp acidity and excellent mineral sapidity, it offers a slender, deep, and persistent palate, establishing itself as an essential choice for lovers of artisanal wines with great character and longevity.
Service
We recommend tasting it at a temperature of 8/10° in tulip glass. Wine is to be drunk immediately but will express its best in a few years. It is advisable to keep it in a horizontal position in a cool, damp and dark cellar.
Pairing
The Conasbrancas goes perfectly with the main courses of fish, to try with fillets of sea bream stew with tomatoes and olives.

Galicia is a land that preserves 78% of the alpelographic heritage of all of Spain, the winemaking potential is incredible. It has 5 different wine denominations of which the most recent is also the most famous, founded in 1988, the DO Rias Baixas. In Rias Baixas a white grape variety is mainly grown: Albariño, but also reds such as: Caiño, Espadeiro, Loureiro and Mencia. Granite sandy soils facing the sea. Centenary-year-old vineyards at the root. Xurxo Alba Padin wanted his life to be the combination of all this and since 2005 he has managed his own winery in Castrelo, a hamlet of Cambados: Bodegas Albamar. Xurxo comes from a family that produced wine to serve drinks in their furancho, a sort of home restaurant animated by the neighbors of the hamlet and travellers, a place of social gathering as well as restaurant, where Isa, Xurxo's mother, tirelessly prepares decades of delicious delicacies, including the inimitable tortilla de patatas. It is in this context that Xurxo continuously hosts people from everywhere, infecting them with its positive and pioneering energy and always engaging with the outside world. Xurxo is making more and more headlines for the expressions of its wines, which are increasingly larger and more sought after throughout the world. He works on micro-plots of old vineyards, sometimes ungrafted, scattered throughout the Salnès sub-area. Xurxo represents, together with others, the emerging youth of Rias Baixas. It produces tense, fresh, balsamic, savory terroir wines… vinos atlanticos!
