Amarone della Valpolicella Classico DOCG Moropio by Antolini is the king of Valpolicella, produced with grapes harvested in the "Morópio" vineyard, located on the hills of the Marano valley. Obtained with the classic blend of Veronese grapes; Corvina, Corvinone, Rondinella, Molinara. The bunches, after manual harvesting, are placed in boxes to dry for 90-120 days. Crushing of dried grapes between the end of December and the end of January; and fermentation with only indigenous yeasts. It refines in various types of wood for 24 months followed by refinement in the bottle for 6 to 12 months. The Moropio It has an intense and complex aroma, with hints of dried flowers, black cherry jam and sour cherry, with notes of sweet spices. On the palate it is fine, dry, bordering on sweet, warm and soft, with good freshness and velvety tannins. A wine to be enjoyed together with game, stews and braised meats or simply on its own.
Service
We taste IT at a temperature of 18/20° in gran ballon glasses. Wine to drink immediately but will express its best in a few years.
Pairing
Excellent wine to pair with elaborate pasta dishes, red meat, game and very aged cheeses.

The Antolini company is led by Paolo and his brother Stefano and is located in the hilly area of the municipality of Marano di Valpolicella, San Pietro in Cariano and Negrar. The vineyards cover a total area of approximately 9 hectares, and are located on predominantly clayey soils, which have the property of retaining water and slowly transferring it to the roots, for this reason there is no irrigation system in the vineyards. Another peculiarity of the area lies in the high temperature range found between day and night, which allows us to obtain particularly fragrant and complex wines on the nose. The cultivation system they adopt is the traditional one of the area, the double pergola, and there are many rows planted on the "marogne", the characteristic dry stone walls that form wonderful terraces where, not infrequently, there are also olive and cherry trees. Since 1993 in the locality “Semonte”, in the municipality of San Pietro in Cariano, they have owned 1 hectare of vineyard, and in 2000 in the locality “Ca' Coato”, in the municipality of Negrar, precisely in the hilly area that extends between San Vito and Roselle , purchase a plot of approximately 2 hectares. From the beginning they have chosen to operate with respect for the environment, practicing guided and integrated control to use pesticide products to a minimum. In 2001 they completed the construction of the cellar: on the first floor there is the room intended for drying the grapes while on the ground floor the warehouse and the area destined in the future for bottling; outside, under a roof, there are modern-concept winemakers for fermentation and in the basement the processing and storage cellar, with steel tanks, and, under two brick vaults, the cellar reserved for aging, with barrels and barriques. Respect for tradition and the typical nature of the wines are and will always be a fundamental value for the Antoninis: ignoring fashions, they aim to make the most of the native vines, the territory and the work of the winemaker, so that each of their wines is the complete and sincere expression.
