Winery: Daniel Ramos
The adventure of Daniel Ramos and his wife Pepi San Juan began in 2005 when they bought some vineyards in Cebreros, a small Spanish town located in the autonomous community of Castile and León, with the aim of producing wines that are the result of different land and terroir. They immediately start to do some experiments on the harvest of the same year, continuing the following year. In 2007, given the excellent results achieved, they decided to buy another 5 hectares of old vineyards, especially of Garnacha, planted in different types of land and located at different altitudes, in the southern part of the mountain of Cebreros. In the area there are two types of land; Granite sandy soils and slate shale, excellent for the vineyards of Garnacha. The vineyards that are located on granite soils are located between 750 and 800 meters high and have an average age of 100 years, while those found on shale soils, called El Gato, Galayo Alto, and Galayo Bajo y La Movida, they are about 50 years old. The white wines are made from grapes bought by some vineyards of the Cebreros wine region and are all grown on granitic sandy soils. Daniel Ramos produces two lines: the Zerberos Finca which is the result of his experiments, and the Κπ which is vinified according to the centenarian tradition of the area, with refinements in cement, clay, and wood.
