We recommend to taste it at a temperature of 16/18° in large glasses. Excellent to drink immediately but if left in the cellar a few years can give great emotions.

Cellar: Dominique Derain
Dominique Derain is a well-known name of the Hautes Cotes de Beaune. Arrived in 1988 as a cooper, he bought an estate near the village of Saint-Aubin and began to cultivate his vineyards and produce wines in a biodynamic way. Today he is retired, and he has passed his property to Julien Altaber and Carole Schwab, but he still has a hand in the vineyard and in the cellar. He regularly receives requests from many winemakers from all over the world to give him wine-making advice. On one of these occasions, through a friend who owns a wine and photography shop in Paris called Faute 'O Vin, he meets Julio Denoso a Chilean vigneron. Since then a solid friendship was born that has now been forged with the creation of the Domaine Dominique Derain. The company is located in the northeastern corner of the Casablanca region just 20 minutes from the ocean, and benefits from relatively mild temperatures and average rainfall. The Pinot Noir vineyards are planted on terraces at an altitude of 350 meters on granitic clay soils rich in manganese and bred in a biodynamic way.
