Fermentation and vinification in cement and stainless steel, aging for 18 months in large barrels.

The cellar: Monte Bernardi
The Monte Bernardi is located in Panzano in Chianti, in the heart of the Chianti Classico. The name of the estate dates back to 1085 and since 2003 belongs to the Schmelzer family who have since invested a lot of time, love and money in the vineyards, the cellar and the villa. The vineyards are cultivated in a biodynamic way and this allows the maximum expression of the terroir, the highest quality and harmony between the vineyards and the environment. The processing methods include manual harvesting at optimal ripeness and the selection of the best fruits. In the cellar the grapes are de-stemmed and lightly pressed directly in small stainless steel or oak fermentation tanks. Short macerations from 3 to 5 days and depending on the desired style, different sizes of oak barrels are selected for maturation. After a maturation of 8 to 30 months, the wines are bottled without filtration or aging. In short, the result of this work of love are pure wines that express the essence of Panzano.
