We taste it at a temperature of 16/18 ° in tulip glasses. To be drunk immediately but will express its best characteristics in a few years.

Cellar: Clos Siguier
Gilles Bley, his partner Pauline and their son Baptiste are yet another generation of winemakers in Boutet. Yet another because the domaine was born in 1779 in this bucolic town in the municipality of Bagat-en-Quercy, in the Aop Cahors area. Cahors is a qualitative and cultural reference point in the panorama of the great French wines of the South-West, made of substance, maturity, energy and ... a pinch of true rusticity. The family vineyards (15 hectares in all, where the Malbec mass selections naturally reign supreme) are located on the limestone plateau of Causse, the terroir that gives the most structured and long-lived Cahors. In the countryside no weeding but mechanical working of the soil, with a formal conversion to organic in perspective. The vinification marries the precepts of non-invasiveness, in a "traditional" key of a pre-enological time. Fruit of low yields, the hand-harvested and crushed-destemmed bunches give a must that ferments spontaneously, with indigenous yeasts, in concrete and steel tanks, without enzymes, without enological clarification and without filtration. The fermentation temperature - usually very long - is controlled; malolactic fermentation occurs naturally. This is how authentic Cahors are born in the Bley house, without compromise or mediation.
