The grapes come from about 3 vines grown as saplings arranged in an amphitheater, and surrounded by dry-stone walls. In the cellar the interventions are reduced to zero to give space to the fruit of the wine, spontaneous fermentation with only indigenous yeasts, and aging in exhausted oak or concrete barrels. Quota N Vino di Contarada is a wine that plays a lot on freshness, mineral depth and acidity, with aromas of red berry fruit followed by spicy and herbaceous notes.

Cellar: Eduardo Torres Acosta
Eduardo Torres Acosta is originally from Tenerife, one of the marvelous islands of the Canary archipelago. Son of a postman of the island, Eduardo since childhood has approached viticulture following the teachings of his grandfather and father who made wine in the traditional way. After graduating in oenology, he moved to Sicily, where in 2012 he got his first experience with Arianna Occhipinti, and then with Passopisciaro as an oenologist. Despite the difficulties encountered by Eduardo on Etna, in 2014, thanks to the support of people aware of his talent, he managed to rent small plots of land for a total of 2 hectares. Eduardo has mainly looked for old vineyards planted with trees, which are located on the northern slope in the districts of Pietramarina, Sciaranuova and Allegracore at different altitudes, between 600 and 800 m above sea level, and on different types of land, mainly formed by volcanic ash and rich in stones. His approach, both in the vineyard and in the cellar, is to intervene as little as possible to obtain wines that are the true mirror of the impervious and marvelous territory of Etna. In the vineyard it works only with sulfur and copper, checking the vigor and production through winter and green pruning and following the vineyard's directions in every area. In the cellar it spontaneously ferments, followed by vinification with the minimum intervention, the use of sulfur dioxide only if necessary. To bottle and decant it follows the lunar trend. Two wines are produced: North Versand obtained from a blend of Nerello Mascalese, Nerello Capuccio, Alicante and Grenache, and the Bianco Versante obtained with Minnella and Catarratto grapes.
