Bruto and The Beast is a bottle refermented wine obtained from white grapes according to the bottle refermentation method. The grapes come from vineyards located on limestone and loamy soils at 350 m.s.l.m. First fermentation in steel tanks without maceration and refermentation in the bottle with the addition of must. A sparkling wine with a lively foam that expresses fresh floral notes and fragrant fruity scents to the nose, offering a pleasant olfactory bouquet. ColFondo Agricolo Colli Treviagiani IGT di Bele Casel is a sparkling wine obtained through the refermentation in the bottle, a traditional method of the Asolo hills for many generations. The grapes used are Glera and local varieties such as Bianchetta Trevigiana and Perera, which grow on marly-clayey soils. The Metodo interrotto Brut Nature Rosè by Furlani is obtained using a bledn of red and white grapes that come from old vineyards that grow on soils of calcareous origin. Spontaneous fermentation for the formation of the base wine and re-fermentation in the bottle where it remains to refine on the lees for two years. The Champagne Extra Brut Bulles de Comptoir 12 Caché dans l'evidance by Charles Dufour is a Champagne from the Cote de Bars obtained from a blend of Pinot Noir, Chardonnay and Pinot Blanc. The majority of the blend (80%) is made with the 2021 vintage, (year in which Dufour lost 80% of the production due to the combined effect of frost, downy mildew and botrytis), the rest 20% with 2010 reserve -2020 and reserve 1982-2009. Fermentation occurs spontaneously with indigenous yeasts. The refinement in Burgundian pièce and large barrel continues. No clarification or filtration before bottling.
