Crémant de Savoie Chant des Flocons - Domaine H Sukhwan-Ha
Domaine H Sukhwan-Haè's Crémant de Savoie Chant des Flocons interprets the Alpine identity of Savoy with extraordinary precision. Produced by Sukhwan Ha, a talented winemaker and sommelier of Korean origin, this Crémant originates from the Torméry vineyards, in the heart of the Crémant de Savoie AOC appellation, from a blend dominated by Jacquère (approximately 90%) and complemented by a small percentage of Altesse, two historic varietals capable of expressing all the freshness and minerality of the region's mountain terroirs. Domaine H's production philosophy is based on environmentally friendly viticulture and low-intervention vinification, aimed at preserving the purity of the fruit and the transparency of the terroir. After fermentation and bottling with the addition of liqueur de tirage, the wine undergoes a second fermentation in the bottle and ages on the lees for approximately twelve months. Although the AOC Crémant de Savoie production regulations require a minimum of nine months, Domaine H slightly extends the aging on the lees to achieve greater complexity without compromising the wine's characteristic tension and freshness. In the glass, it appears bright and luminous, pervaded by a fine and persistent perlage. On the nose, elegant aromas of white flowers, citrus zest, white peach, and subtle hints of Alpine herbs emerge. Aging on the lees adds delicate hints of brioche and bread crust, perfectly integrated and never invasive. On the palate, the wine is taut, precise, and crystalline, supported by a vibrant acidity that leads to a long, minerally, and saline finish, a true expression of the Alpine freshness of Savoy. It is ideal as a refined aperitif, but also pairs naturally with oysters, shellfish, raw fish, fish tartare, fresh cheeses, and contemporary Alpine cuisine. We taste it 8/10° C. It is recommended to serve it in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairings
Excellent as an aperitif, paired with fish starters, main courses of fish, ideal pairing with fois gras tartare.

Founded by Korean-born sommelier-turned-winemaker Sukhwan Ha, the estate was established in 2023 with a clear ambition: to express the unique character of Chignin's mountain terroirs through sustainable viticulture and precise, low-intervention winemaking. Before becoming a vigneron, Sukhwan Ha built an impressive career in the world of fine dining and wine. Based in Lyon, he was the chef sommelier and owner of Le Passe-Temps, one of the first restaurants in the city to earn a Michelin star. There, he developed a reputation for championing terroir-focused, low-intervention wines and introducing diners to some of France's most distinctive producers.
