Chenin blanc purity from the legendary vineyards Clos de la Coulèe de Serrant, a monopoly of Nicolas Joly, where plants have an average age of 60 years. Fermentation is spontaneous and occurs in double 500 liter oak barriques. After fermentation the aging lasts for about 6/8 months on the fine lees in the same barriques. The Savennières is a great white wine with a straw yellow color tending to the golden. The nose is very mineral with complex fruity scents, spicy, menthol and lime notes that change continuously. On the palate it is powerful, tense and very deep, from the very long end. It is a wine that is calmly degraded that it opens slowly as the minutes pass.

Nicolas Joly, a man of great charisma and personality, is one of the most acclaimed vintners in France. In recent years, he has been very committed to carrying around the world the method and thinking of Steiner, the one who started to apply biodynamic principles to agriculture at the beginning of 900. Nicolas Joly was not always a vintner, after studying at Columbia University, worked for several years as a banker at J.P. Morgan in New York City. In 1977 he decided to leave the bank to manage the "Château de la Roche aux Moines" wine estate in Savennières. From now on Nicolas was very skeptical about running the vineyards with modern methods and the effects these had on nature. In the early 1980s he bought a book by Steinar, the father of biodynamics, and began cultivating his vineyards with the principles of biodynamics. The first completely natural wine was in 1981 the Clos de la Coulée de Serrant, to which it added in 1984 the entire range of wines produced by Nicolas Joly. The Coulée de Serrant is a Chenin Blanc vineyard of only seven hectares of exclusive Joly family property. The vineyard was planted in 1130 by the Circestrian monks, and since then has always been sold. In the vineyard there are old vineyards with an average age of 15 to 80 years on land consisting essentially of shrubs, and work is done by hand and with the help of horses. Nicola Joly is also the owner of the "Clos de la Bergerie" vineyard, three hectares in the Savenière-Roche aux Moines appellation, and the "Les Vieux Clos" vineyard in the Savennesres appeal, from which the respective wines have a price more accessible than the legendary Clos de la Coulée de Serrant.
