Forestieri Bianco by Agricola i Forestieri is a wine obtained from a blend of 30% of the grapes owned by the company and the rest purchased from trusted suppliers. The Trebbiano was vinified in cement with 2/3 days of maceration, racking off at the raising of the cap to maintain freshness on the maceration and limit extraction. Malvasia Bianca and Vermentino were vinified in white and fermented in stainless steel. Once the fermentations were completed, weekly batonnage was carried out on the wines. The result is a fresh, fragrant and graceful white, which makes disengagement at the table a distinctive feature that makes it irresistible.
Service
It is advisable to taste it at a 8/10° temperature in tulip goblets. Wine to drink immediately but left in the cellar a few years can give you great emotions.
Pairing
To combine also with the whole meal when the cuisine is that of the sea, it is excellent together with the baked sea.

On the other hand, Ezequiel Allassia, originally from Argentina, has embraced the local culture and traditions of the Tuscan Maremma, becoming an integral part of the territory. His experience as a cellar master at Ampeleia, where he met Dario, provided a solid foundation for creating a project that highlights not only local grape varieties, but also respect for the environment and traditional agricultural practices. Agricola i Forestieri's approach stands out for the valorization of historic vineyards, often overlooked, and for the implementation of traditional cultivation methods. The idea of "promiscuous agriculture" and the co-planting of local varieties reflect a deep connection with the territory and its traditions, allowing the wines to express a unique and authentic identity. The different altitudes of the vineyards help to create wines with remarkable balance and complexity, which tell the story of the place and the people who work there.
