Completement Red by Domaine in Black is a wine of great expression and character, the result of in-depth care in the winemaking process. Originating from the Nothalten area, in Alsace, this Pinot Noir is produced with grapes coming from a particular plot of twenty-five year old vines, planted on sandstone soil, which gives the wine a unique complexity and typicality. Maceration for ten days with whole bunches allows the extraction of intense aromas and flavors, maintaining the freshness and purity of the grapes. This winemaking method not only enhances the fruity notes of Pinot Noir, but also adds a pleasant tannic structure and a slight aromatic complexity. After maceration, the wine is pressed and aged in a mix of demi-muids and vats, a process that lasts until the following spring. This refinement allows the wine to evolve, developing further nuances and greater harmony. The result is a wine that looks like a real "bomb": intense, but at the same time fresh and pure. Its fruity and mineral notes make it an excellent choice to accompany dishes of white meat, game and mature cheeses, but also to be enjoyed alone, in a moment of pleasant conviviality. The rarity of this wine means that each bottle represents a unique experience for enthusiasts.

Service

We recommend tasting it at a temperature of 16/18° in tulip glasses. Wine to be drunk immediately but will express its best in a few years. It is recommended to keep it in a horizontal position in a cool, humid and dark cellar.

Pairing

Ideal with meat-based dishes, semi-hard cheeses, to try with a grilled fillet.

Domaine In Black by Lambert Spielmann, is an artisanal winery located in Saint Pierre in Alsace. Lambert Spielmann started his business in 2019. Most of his vineyards are located in the town of Epfig and have been certified organic since 1997. The methods are inspired by biodynamics, no or very little treatment, only copper and sulfur, but also wicker teas. and achyl, works according to lunar and planetary rhythms. The harvest is manual in small boxes to keep the bunches, the pressing is very soft. No oenological intervention in the cellar, no filtration or clarification. Furthermore, Lambert does not pump up or punch down during maceration. Due to the very soft pressing no decanting is necessary. All wines are racked by gravity. Very few interventions for simple wines of great pleasure!
