We recommend tasting it at a temperature of 8/10 ° in tulip glass. The Fossil is to be drunk immediately but will express its best in a few years. It is advisable to keep it in a horizontal position in a cool, damp and dark cellar.

The Fossil goes perfectly with the main courses of fish, to try with fillets of sea bream stew with tomatoes and olives.
Winery: La Perdida
La Perdida is a dynamic Galician reality, born as a project of passion and devotion by Nacho Gonzalez. Nacho was born as a biologist, and after he inherited a plot of old Garnacha Tintorera vineyards from his grandmother (who told him that the old vineyards were magnificent and needed to be looked after), he decides to bond through an indissoluble bond with the land. Start looking for other abandoned vineyards and start bringing them back to life through biodynamic agriculture. Today Nacho has already recovered 13 plots of vineyards located around the village of Larouco, hidden between mountains and rivers in the interior of Galicia, in the Valdeorras appellation, one of the most historic in Galicia. Among the rows we can find local varieties such as Mencia, Garnacha Tintorera, Palomino, Dona Branca and Godello. The vineyards are located on granite soils, at variable altitudes and exposures, and each has a unique energy, which Nacho manages to transport into the bottle. The winery is located in the basement of a renovated house in the city center, where wine is made in Tinaja, traditional terracotta amphorae, or in large barrels with short macerations, while aging takes place in a combination of barrique and amphora. Nacho's wines continue to improve each vintage, as he and his beloved vines grow wiser with age.
