The “Selva di Sotto” by La Staffa is a fine and harmonious white wine, with a strong and refined personality, the result of the vinification of a particularly suitable Verdicchio cru, planted in 1974, and of a chat between Riccardo Baldi and Carlo Pigini, already director and oenologist of the Colonnara winery in Cupramontana. A Verdicchio that was born inspired by ancient traditions, in which no sulfur dioxide is added during the production process and the must is left to cool with the ancient technique of decanting air. Vinification and aging take place in concrete tanks.

The winery: La Staffa
The winery La Staffa is located on the hills of Stafford, in the classical part of the Verdicchio dei Castelli di Jesi. Founded as a small winery to produce wine for family consumption, it is now run by Riccardo Baldi who works 6.5 hectares poggiono on a soil composed of clay and limestone, giving structure and salt to the grapes. Maximum attention is paid to the vineyards, some of which are 40 years old, with biodynamic treatments. The annual production is about 30,000 bottles. The bracket is a simple cellar with the authentic taste of the traditions.
