The “Selva di Sotto” by La Staffa is a fine and harmonious white wine, with a strong and refined personality, the result of the vinification of a particularly suitable Verdicchio cru, planted in 1974, and of a chat between Riccardo Baldi and Carlo Pigini, already director and oenologist of the Colonnara winery in Cupramontana. A Verdicchio that was born inspired by ancient traditions, in which no sulfur dioxide is added during the production process and the must is left to cool with the ancient technique of decanting air. Vinification and aging take place in concrete tanks.

It is advisable to taste it at a temperature of 8/10 ° in tulip goblets. Daily wine but left a few years in the cellar can give you great emotions.

The winery: La Staffa

The winery La Staffa is located on the hills of Stafford, in the classical part of the Verdicchio dei Castelli di Jesi. Founded as a small winery to produce wine for family consumption, it is now run by Riccardo Baldi who works 6.5 hectares poggiono on a soil composed of clay and limestone, giving structure and salt to the grapes.
