Winery: Domaine La Sénéchalièrere
Domaine La Sénéchalière is located in Saint-Julien-de-Concelles, a small town located in the Loire. The cellar is managed by Marc Pesnot who is the descendant of a family that has always been linked to wine and rooted in the territory. Marc, after collaborating with some natural wine producers such as: Lapierre, Overnoy, and Gramenon, decides to convert his Domaine into organic with biodynamic practices, and produce the same type of wine, pure and without artifice. 20 hectares of vineyards found on soils rich in shale, slate and pebbles, where he grows two grape varieties: Melon and Folle Blanche. No synthetic products are used in the vineyard, the grapes are harvested by hand and, since no sulphites are added during vinification, a careful selection is carried out to discard any diseased grapes that could contaminate the entire vat. With concern for the expression of the terroir, Marc does not add any oenological product to the grape must in the cellar. It does not correct the acidity of wines, and does not add yeast. Despite working in the Muscadet appellation, Marc has deliberately chosen not to classify his wines as such, because rather than the restrictive rules of the appellation, Marc prefers to continue with his work philosophy.

Dall'azienda di Marc Pesnot il "La Bohème" a base di melon de la Bourgogne ha forti sentori di di pesca e melone e, in generale, di frutta tropicale matura. Ha accompagnato bene un'insalata di finocchi e salmone e un filetto di orata la forno con patate.
