The Bourgogne Blanc "La Tête dans les Nuages" by Domaine AMI is a white wine made from 100% chardonnay. The fermentation is slow and spontaneous, with only indigenous yeasts and carried out in old Bordeaux barrels, until the following spring. On the nose Citrus and mineral notes. Mouth perfectly balanced between fruit and tension.

Service

We recommend tasting it at a temperature of 8/10° in tulip goblets. Wine to drink immediately but if left a few years in the cellar can give great emotions.

Pairing

Ideal with vegetables dishes, semi-hard cheeses, to try with an oven baked.

The Domaine AMI was born from the meeting of 2 friends, Willy and Paul. Willy, a profound connoisseur of the Cote de Beaune terroir, first worked at the Domaine de Montille, and then took care of winemaking at the Clos du Moulin aux Moines in Auxey-Duresses, while Paul studied the art of tasting in London and Paris, and his love of wines led him to work with exceptional winemakers such as Dominique Hauvette and Oronce de Beler.
